Dinner Tonight.

So Tyler and I tried to make the most of this gloomy MLK day.
We slept in until about 8:30 am. I think Tyler could have slept longer, to be honest, but I feel like getting 12 hours of sleep is a bit excessive, even for a 2 year old. We lounged together in bed until 9, but then I made us get up! We had pancakes and bacon, and then watched Ratatouille. (He pronounces it Rabatooey.)
It was a good morning, considering how cold and foggy it is outside. I thought if it was sunny we may try to do a few laps at the Zoo or something, but today was so not the day to be outside. Tyler did end up getting a bit fussy, though. (He realized his Daddy wasn't home!) So we went to lunch at Sonic and then to Target to buy a new car. I think it lifted his spirits to get out of the house for an hour, you know?
Anyway, so we've been home for most of the afternoon now. Tyler's been playing choo-choos, and is now watching Cars. (He has not let go of his new Doc, either!) I've been cooking. On the menu for tonight:

Baby Spinach Stuffed Matambre, Quinoa and Salad.

1 flank steak
lots of baby spinach
carrots
wine
chicken stock
garlic
bay leaf
thyme
marjoram

Basically, you pound the meat until its about 1/4" thick, and then spread the spinach and carrots over top. Roll it up like a pinwheel, and secure. (I use the Food Loops - awesome invention! Get them at Bed Bath and Beyond) Brown the meat on all sides, and then let it simmer for about 3 hours in a bath of chicken stock, wine and herbs.

I haven't tasted it yet, but the house smells delicious.
Will let you know how it comes out.
